3lbs potatoes (idaho)
About 6-8 cloves of garlic, to taste
4-6 oz of cream cheese
sour cream to taste
1/4 c. of butter (try to use butter, rather than oleo)
Okay, all these amounts are approximate--this isn't rocket science (or baking!), this is mashed tatoes.
Peel and chunk the potatoes. Boil the potatoes with the cloves of garlic in the water, until the potatoes are soft. Drain the water (save it if you're making gravy) and leave the cloves of garlic in with the potatoes. Dump potatoes and garlic into your mashing vessel, over the butter.
As you're mashing, add the cream cheese and gradually add the sour cream (the sour cream will thin the potatoes, so be careful with this). Use more cream cheese if you are using the potatoes as part of a soft-food diet, so you pack more calories into each serving. Mash and mix until the potatoes are smooth and consistent.
Put the whole mess into a casserole dish, sprinkle with paprika for prettiness, and bake in a 350F oven for about 30 mins. You can make the potatoes ahead and chill them, pulling them out to bake when you are ready to serve. Chilled, it may take longer than 30mins. However, if you are baking it right after mashing, then it may take less. Watch it carefully.
This reheats well--if you have little ceramic ramekins, just spoon a serving in and nuke it in the microwave when you want some.
Also, just some advice for living on a soft-food diet: Make sure to avoid acidic things, like juice (yes, even apple juice is acidic, to a mouth full of incisions!). Stick to powerade (I suggest the red kind) so you can replenish electrolytes and salt. Powerade hydrates better than Gatorade or water. If you're really starved for calories, like I was, remember that milk has a lot of protein and good fat. Speaking of good fat--splurge on some avocados!
I don't know how much extra fat you have in reserve--I know I had major issues with losing weight when I had to go on soft-food and liquid diets for oral surgeries (I've had three, of varying degrees).
